APPO, Provincial Association of Olive Producers, is a cooperative founded in Viterbo in 1977 and built on the values of cooperation, professionalism and quality. The founding members shared the goal of combining forces, resources and skills to establish themselves on the local market with an extra virgin olive oil with a high quality profile. Over the years, APPO has demonstrated that it knows how to keep pace with the ever-changing world, always confirming itself at the forefront in all aspects related to production, from the olive grove to the oil mill. Cooperativa Agricola in 2015, is the point of reference for a Producers' Organization (O.P.), which brings together more than 14,000 players in the quality EVO oil supply chain: farms, oil mills and cooperatives dedicated to the production of extra virgin olive oil , located throughout the entire territory of the Province of Viterbo, Rieti and Umbria, to which it provides technical, commercial and
promotional, as well as training on the latest cultivation and production techniques and traceability processes.
For APPO the quality of extra virgin olive oil is measured in:
● Link with olive growers: just as the 1,660 members dedicate themselves to the 530,000 olive trees, which grow in approximately 2,700 hectares of olive groves between Lazio and Umbria, the Società Cooperativa Agricola has always cultivated a constructive relationship with olive growers, supporting them with professional training and constant technical assistance on integrated and organic production, on the improvement of cultivation conditions, on the conservation of soil fertility, on the monitoring of the oil fly, on new pruning and harvesting methods, because the sensory quality of extra virgin olive oil begins with a fresh and healthy olive, harvested and delivered to the oil mill as quickly as possible;
● Expertise of the oil millers: since 2016 APPO has managed two oil mills, one in Gradoli and one in Castel Cellesi in Bagnoregio, located on the opposite shores of Lake Bolsena, thanks to which it produces and bottles an average of 130,000 kg of extra virgin olive oil every year ; Expert oil mill workers dedicate themselves to the pressing of Caninese, Frantoio, Leccino and Maurino olives, cultivars typical of the Tuscia area and Central Italy: the temperature of the paste is constantly monitored during pressing and malaxing so that it never exceeds 27° C and the organoleptic qualities of the extra virgin olive oil are kept unaltered;
● Union and collaboration between all the players in the supply chain: the APPO cooperative brings together all the players in the extra virgin olive oil production chain, united towards the shared objective of producing and marketing quality extra virgin oil; the vision of olive growing with a low environmental impact and the certified traceability system is accompanied by the marketing and promotion activity, which recognizes the right value for each individual actor in the supply chain for their work, from the olive to the plate.
EXTRA VIRGIN OLIVE OIL
APPO is committed to supporting an oil culture that develops from one shore of Lake Bolsena to the other, up to the highest part of the Tiber Valley. In this territory of volcanic lands once inhabited by the Etruscans, every day APPO members perform gestures rich in technique, competence and progress, but more ancient than ever. The meticulous work of the Cooperative leads to the production of extra virgin olive oils with a high sensorial profile: in the 2022 oil campaign, APPO oils won the Orii del Lazio, Foreign Press Association in Italy and Lions Club awards.
APPO produces and bottles different types of extra virgin olive oil, which, based on the areas and production regulations, present very different sensorial profiles: the assortment is a sort of "Oil Charter", which expresses the biodiversity of the production oleicola from the province of Viterbo and offers a proposal that can adapt to every palate and every dish.
The traceability of the process and products is certified by the CSQA system, pursuant to the UNI EN ISO 22005:2008 standard, which guarantees the 100% Italian supply chain and allows us to trace all the actors in the supply chain who participated in the production of the single batch, makes the collection of the goods efficient and effective
product in cases of risk to the health of the consumer.
DOP TUSCIA extra virgin olive oil
Extra virgin olive oil with protected designation of origin recognized by the European community:
The
production regulations define the rules for the origin of the raw material, the varieties of olives allowed and, above all, the analytical and organoleptic characteristics of the finished product. The OLIO DI ROMA PGI extra virgin olive oil by APPO is produced in the Gradoli area, with Caninese, Frantoio and Leccino olives, pressed within 6 hours of harvesting. The result is a green oil
emerald with golden reflections, which releases a fragrant aroma of fresh fruit, with hints of fresh grass, artichoke and almond, with a good balance of bitter and spicy. An extra virgin olive oil ideal for legume soups, grilled or roasted red meats, grilled vegetables. This oil, for which large quantities are guaranteed, enters the market with an excellent quality-price ratio and with a name with strong appeal for the national and foreign markets.

ORGANIC extra virgin olive oil
Extra virgin olive oil produced with olives from organic farming, certified by a control body recognized by the European Union. APPO's ORGANIC extra virgin olive oil is produced in the Gradoli area, with Caninese, Frantoio and Leccino olives, pressed within 6 hours of harvesting. The result is an oil with vertical aromas of artichoke, chicory, borage and cut grass; in the mouth it offers a good presence of bitter and spicy, in perfect balance, and a nice aromatic finish.
An organic extra virgin oil ideal for spicy dishes with a good structure, such as meat and tomato first courses, lake or sea prawns, white meats and lake fish. This oil is considered a strategic product to increase APPO's presence on the national and foreign markets, which are increasingly sensitive and interested in products from genuine, sustainable and virtuous supply chains.

This extra virgin olive oil is produced in the Gradoli area, with Caninese, Frantoio and Leccino olives, pressed within 12 hours of harvesting. The result is an extra virgin olive oil with the aromas of artichokes and pear, sweet almond and burnet, delicate and balanced on the palate with bitterness and spiciness.

CASTEL CELLESI extra virgin olive oil
This extra virgin olive oil is produced in the Bagnoregio area, with olives from Frantoio, Leccino, Caninese, pressed within 12 hours of harvesting. The result is an extra virgin olive oil characterised by light fruitiness with fresh aromatic notes of green olive, cut grass and green almond; with a delicate taste, with faint bitter and spicy notes. An extra virgin olive oil suitable for those who don't like too intense aromatic and taste sensations, ideal for fish dishes, white meats, grilled vegetables and salads.

RES ANTIQVA organic extra virgin olive oil
RES ANTIQVA is the APPO brand used for the foreign market, thanks to the consolidated commercial relationship with the importer Res Antiqva Corporation, which markets its organic oil in the USA in Whole Foods stores (American organic large-scale retail trade). This extra virgin olive oil is produced with Caninese, Frantoio and Leccino olives from organic farming, certified by a control body recognized by the European Union, harvested in the Gradoli area and pressed within 6 hours of harvesting. The result is an oil with vertical aromas of artichoke, chicory, borage and cut grass; in the mouth it offers a good presence of bitter and spicy, in perfect balance, and a nice aromatic finish. An organic extra virgin oil ideal for spicy dishes with a good structure, such as meat and tomato first courses, lake or sea prawns, white meats and lake fish.
