STAND A10 IL VULCINO

VULCINO is the inspiration of the artistic soul of Eugènie Kunst, sommelier and classical
musician who, together with her husband and a team of enthusiastic young people, realized
their dream and set up this 30 h. farm of which:

  • 15 ha. with 2,000 secular olive trees (non-intensive)
  • 200 m above sea level, vulcanic soil
    Harvest early October, milled within 4 hours
  • Estate mill: MORI 2 phases
  • Pressed below 23°C and stored at 16°C
  • Two olive varieties and two olive oils: one monocultivar and one blend.
  • Polyphenols over 600 mg/kg

SAECULA
ORGANIC EXTRAVIRGIN OLIVE OIL
Saecula is a Caninese monocultivar of robust, complex character, whose fresh herbaceousness and hints of artichoke, chicory and lettuce, are well balanced with pronounced bitterness and final pungency.

PRINCIPE
ORGANIC EXTRAVIRGIN OLIVE OIL
Principe is a blend of Caninese and Frantoio with an intense fresh herbaceous aroma. To the palate its vegetal fruitiness, with notes of artichoke and green almond, are harmoniously balanced with distinct bitterness and pungency.

VULCINO BLACK GARLIC 
They are garlic bulbs subjected to the Maillard reaction during which the external film dries out, while the cloves blacken and soften. The flavor becomes a mix of liquorice, porcini mushrooms and truffle.
It grows in volcanic soils rich in minerals.
The transformation process from white garlic to black garlic lasts more than a month in our laboratories.
It is a "sweet" black garlic with a size of 40g at the end of the process, very convenient for use in the kitchen.
Softness is one of its characteristics and persists for a long time.
